I wanted for so long to make a molten or lava cake at home just like the ones you get at many fine dining restaurants. 

After many tries, this was the winning recipe. I have been making these rich, decadent amazing flourless molten cakes for over ten years now.

These are so easy to make yet looks so elegant and divine. These are great for anyone who can’t have any gluten in their diet. The recipe is totally gluten free. 

Since making my first molten cake, my daughter Tori has made them for special occasions like me. Some of the photos her on this page are from her delicious molten cakes. How lovely for a date night, a birthday dessert, and of course Valentine’s Day. Both Tori and I each made these amazing flourless molten cakes this past Valentine’s Day. I made these for my hubby Alan and my son Josh and Tori made one for her boyfriend. She said he was very impressed. I guess so since she told me he had two back to back. 

These are great for any dinner party too. They make a beautiful presentation. 

These gems taste just perfect on their own but, to be even more decadent, add a scoop of a good quality vanilla ice cream or gelato right on top or on the side of each cake. Also, you can dress the plate it’s served on with some fresh berries and whipped cream.

What Goes In A Flourless Molten Cake Recipe?

 

Here Are The Everyday Ingredients:

  •  semisweet or bittersweet chocolate chopped
  • 3 whole eggs, best when room temperature
  • 3 egg yolks, room temperature 
  • unsalted butter cut into pieces, no need to soften 
  • pure vanilla extract
  • granulated sugar or granulated no calorie sweetener 
  • unsweetened cocoa powder, regular or Dutch processed 
  •  fine sea or kosher salt

Optional toppings and garnish:

  • fresh strawberries, raspberries, blueberries for garnish, this is optional
  • 1 tablespoon powdered sugar for topping, this is optional
  • chocolate syrup or hot fudge sauce for garnish, this is optional
  • unsweetened cocoa powder dusted over top for garnish, this is optional
  • vanilla ice cream, this is optional
  • whipped cream, either made fresh or aerosol from a can, this is optional 

 

How Are These Amazing Flourless Molten Cakes Made?

 

Here’s The Easy Directions:

  1. Butter 6 six ounce ramekins, coat the bottom and sides. Place them side by side on a rimmed cookie sheet that has been lined with parchment paper. 
  2. Preheat oven to 400 degrees
  3. In a heat proof microwave bowl or glass measuring cup that is microwave safe, add the chopped chocolate and cubed butter. Microwave for 25 seconds. Take out and stir. Do this another few times until chocolate is almost melted. Take out and stir until the chocolate is completely melted. 
  4. Sift the cocoa powder over the chocolate mixture. Mix well to combine. Add in sugar. Mix again to combine. Add in vanilla extract, and salt. Mix. Now add in one egg at a time, mix after each egg has been added. Then add the egg yolks and do the same by mixing after each yolk has been added. 
  5. Pour chocolate mixture into prepared ramekins. Don’t go all the way to the top. Fill about 3/4 full. (If you have leftover chocolate mixture, make some more. You can also make these in muffin cups. 
  6. Bake for about 14 to 16 minutes. The centers will still be a little wiggly. This is okay. When finished. Let cool about 5 minutes. Then, take a butter or steak knife and go around the edges of each ramekin. Take a small plate and place on top of the ramekin, invert and the molten cake should come right out. 
  7. Sprinkle powdered sugar if using and garnish with some fresh berries. Add some ice cream and whipped cream.

Ingredients

  • 1/8 cup unsweetened cocoa powder (I used Dutch processed in this recipe to make it extra dark and fudgy)
  • 1/2 tsp vanilla extract
  • 1/4 tsp fine sea or kosher salt

  • 4 tbsp aerosol whipped topping

Instructions
