Dark Chocolate Whoopie Pies

 

These whoopie pies are so moist with a deep dark chocolate flavor. The marshmallow filling is smooth and creamy. Once in awhile it’s nice to indulge in a really good dessert. This was on the top of my list.  Enjoy these with a big glass of cold milk. It’s fun to make with the kids. Bake a batch soon, you will love these!

 

Dark Chocolate Whoopie Pies

Yields 6 filled whoopie pies

Ingredients: 

  • 2 cups all-purpose flour or 1 cup all purpose and 1 cup whole wheat pastry flour
  • 1/2 cup Dutch-process cocoa powder, I used Hershey  Special Dark Unsweetened Cocoa Powder
  • 1 1/4 teaspoons baking soda
  • 1/2 teaspoon sea or kosher salt
  • 1 cup buttermilk
  • 1 1/2 teaspoons vanilla extract
  • 1 stick unsalted butter or margarine, softened
  • 1/2 cup packed brown sugar
  • 1/2 cup granulated sugar
  • 1 large egg
  • Filling:
  • 1 stick unsalted butter or margarine, softened
  • 1 to 1 1/4 cups confectioners sugar
  • 2 cups Marshmallow Fluff
  • 1 teaspoon vanilla extract
  • 1 tbsp milk if needed for texture

 

Directions:

  1. Preheat oven to 350 degrees, spray a 12 cavity whoopie pan with cooking spray. Set aside. (If you don’t have whoopie pan,  line 2 cookie sheets with parchment paper and set aside.
  2. In a large mixing bowl, whisk together flour, cocoa, baking soda, and salt in a bowl until combined.
  3. In a smaller mixing bowl, stir together buttermilk and vanilla.
  4. Using a hand held mixer, beat together butter, brown and white sugar in a large mixing bowl at medium-high speed until fluffy, about 3 minutes. Then, add egg, beating until combined well. Reduce speed to low and alternately mix in flour mixture and buttermilk in batches, beginning and ending with flour. Stop the mixer and with a rubber spatula, scrape down the sides of bowl and make sure you dig down in the bowl to incorporate all dry ingredients into wet. Batter should be smooth.
  5. Spoon batter into molds or onto cookie sheets.
  6. Bake for about 9 to 11 minutes. The cakes should spring back when lightly touched and toothpick should come out clean or with dry crumbs.
  7. Let cool in pan over wire cooling rack for 20 minutes. Then, gently remove onto wire rack to cool completely.
  8. While cooling, make your filling. Beat together butter, confectioners sugar, marshmallow, and vanilla in a bowl with electric mixer at medium speed until smooth. If needed add milk a little at a time to desired texture.
  9. To assemble pies, spread 1 tablespoon filling on flat sides of half of 6 pies and top with remaining pie.
