Grab N’ Go Pantry Muffins

 This recipe for grab n’ go pantry muffins is so easy to make. Only one bowl is needed and some pantry ingredients along with an egg and milk for the most delicious tasting  muffins. Grab one OR two and go!

 

 

 

This recipe is one of those dump in a bowl, mix, bake, then grab and go.

The recipe couldn’t be easier, so even when evenings are hectic, I grab ingredients needed and bake a batch to have ready for the morning. So we all have a yummy breakfast on the go.

 

These muffins are really delicious and made with healthy ingredients.

 

Since I bake these all the time, it’s nice to change things up and add in all different things depending what I have in my pantry.

I listed dried cherries in this recipe, you can swap out any dried fruit such as cranberries, raisins and one of my favorites currants. They mix in like mini chocolate chips and have a great chew. 

If you like nuts, chopped walnuts or pecans add a nice crunch. The recipe is nice and versatile, add or take out for your personal touch.

For those who are gluten free, no worries, these are. As you can see in the recipe below, there is no flour of any kind. Only oats. However, I did mention that you can use half oat flour and half oats for a finer texture in the muffins. This is easily done by putting the oats in a blender for just a few seconds or you can buy oat flour in any grocery store with all the flours and cake mixes. 

Bake a batch today and taste for yourself how yummy these muffins are.

I’ll tell you one thing, these sure taste great with a hot cup of coffee. When I do have time in the morning I make sure I sit down and enjoy these quietly with my mug of coffee. Or, for that matter at night with a cup of tea.  

Best part aside of being so yummy, they are made with healthy ingredients and it’s a one bowl easy-peasy recipe. 

 

Grab N’ Go Pantry Muffins

Yields: 12 muffins

 

What you’ll need to make a batch of grab n’ go pantry muffins…

Ingredients:

  • 1 medium very ripe banana mashed
  • 3/4 cup unsweetened applesauce, you can use baby applesauce 
  • 2 tbsp vegetable oil, coconut oil or butter that’s been melted and cooled
  • 1 large egg
  • 1 1/2 tsp vanilla extract
  • 1/3 cup maple syrup or honey
  • 1 1/2 tsp ground cinnamon
  • 1 1/2 tsp baking powder
  • 1/2 tsp sea or kosher salt
  • 2 1/2 cups oats, I  used old fashion but quick oats will work too (You can use half oat flour and half oats for a different texture)
  • 1 1/4 cup milk of choice, I used almond milk
  • 1/2 cup dried cherries, chopped or cut into smaller pieces if too large, sub out any dried fruit of choice
  • 1/3 cup mini chocolate chips plus 2 tbsp for topping
  • 1 to 2 tbsp coarse sugar for topping, this is optional

 

 

 

 

Here’s how to make a batch…

 

Directions:

  1. Preheat oven to 350 degrees. Line a muffin tin with foil muffin liners. Set aside.
  2. In a large mixing bowl, Add all ingredients up until the cherries. Mix just until all is incorporated. Try not to over mix. Then toss in the cherries and chocolate chips.
  3. With a large ice cream scoop, fill each cup twice until all batter is finished. Sprinkle the 2 tablespoon of chips over all the muffins and sprinkle sugar if using.
  4. Bake for about 30 to 32 minutes or until a toothpick comes out clean or with dry crumbs. Let cool almost completely.
