Grandma Ruthie’s Noodle Kugel/Pudding

First off, I’m calling this Grandma Ruthie’s Noodle Kugel/Pudding recipe instead of “Moms”. The main reason is my niece Wendy, my moms granddaughter was the one able to figure out the recipe and she would make this whenever we came up to visit for the Jewish holidays. I just wanted to clear that up   since a few people have written and asked me is the recipe my moms or grandmas. 

This is the most delicious recipe from my mom Ruthie that everyone loves from family to friends. She was asked to bring her famous noodle kugel when invited to any party. The whole neighborhood new about this noodle kugel.  When there was a special occasion like a new baby, engagement, wedding anniversary, my mom was the first one baking up one of these beauties and dropping it off to neighbors and friends.

I feel blessed to have had the best mom and dad. They had been married for over 60 years and lived a modest but fulfilled life with family and friends that adored them. 

My parents lived up in Rhode Island just around the corner from my sister Rhonda and my niece Wendy and her two daughters Zoey and Eva.

Eva happens to be the same age as my son Josh. They were born four days apart, are the best of friends as well as cousins.

We visit Rhode Island many times a year and they come down to visit us as well.

For having a very small family, we are all really close.

So, that brings me to this most delicious recipe. My mom Ruthie’s noodle kugel/pudding recipe.

She had been making this forever! I always remember this on the table for any special holiday and occasion.

It was passed down from her grandma to her mom, my grandma Anna. My niece Wendy has been making her recipe for a few years now. 

Wendy, and the girls along with my sister and mom were all in a contest up in Rhode Island. Out of 25 recipes, Ruthie’s made the top three! The contest was for the people that lived in the assisted living where my parents lived at the time. There wasn’t an actual winner but they did pick the best 3 recipes.  All I know is my mom was so proud and happy to be in the contest and then to be one of the top three.

I knew it was time to finally share this recipe. I’m so happy to share it here with all of you. 

Keep this on hand, it’s an easy and really delicious recipe that’s great for Christmas and Thanksgiving and of course the Jewish holidays. Also, makes a great addition for any bridal or baby shower. Trust me when I say, it will be the first thing that gets eaten up.

Growing up, whenever we were invited for Christmas dinner at a friends house, Ruthie was asked, or should I say told she had to bring at least two of her kugels. Like I said before, the whole neighborhood knew about her kugel and so did her friends.

I hope you enjoy this as much as my family does.

Recipe note: Wendy stated that although my mom never used an actual recipe, her kugel was and still is the best. I guess there is something about that special person in your life making you something that you love because you love them so much.

As my mom was throwing things in the blender,(Yup, the blender, everything except the noodles gets mixed in a blender) Wendy was able to make a written recipe. Here it is!!

What’s In Grandma Ruthie’s Noodle Kugel/Pudding Recipe?

 

Here’s The Everyday Ingredients:

  • 1 large bag egg noodles, thin or wide is fine
  • 5 eggs
  • 2 tsp vanilla extract
  • 1 cup granulated sugar
  • 1 cup sour cream
  • 15 oz can mixed fruit cocktail, don’t drain
  • 1-½ cups Frosted Flakes cereal or Corn Flakes
  • 2 tsp butter, optional
  • cooking spray

How is Grandma Ruthie’s Noodle Kugel/Pudding Made?

 

Here’s The Easy-Peasy Directions: 

  1. Preheat oven to 350 degrees
  2. Boil noodles as per instructions on bag.
  3. While noodles are cooking, blend eggs, vanilla, sugar, sour cream, salt, and fruit cocktail in blender and whirl until smooth.
  4. Drain noodles when done and pour into a 9 x 13 inch pan. ( We usually use the disposable ones found at the dollar store or in any market)
  5. Pour blended mixture over noodles and gently coat all noodles.
  6. Crunch up the cereal just a little and top noodles. If you want, you can add the butter in dots over the cereal. Or, just leave off.
  7. Bake covered with tin foil for 30 minutes. Take off cover and bake an additional 15 minutes. Let sit out on counter for about 10-15 minutes before cutting. (I can never wait, it smells so good, but try to wait so it cuts easier)
