Thanks to my dearest friend Regina for sharing this home-ec ramen soup recipe she got from her kids. It’s so simple yet totally delicious. Try the recipe and taste for yourself how good it is. Enjoy!

 

 

 A message from Regina: This is the first Home-Ec recipe that my kids brought home and shared with me. I guess my daughter thought it was worthy enough to make again.  So she did and it was fabulous. Since then, we have made this soup many times over the years. 

A big thanks again to Regina and her two kids who by the way are both in college now.

When Regina got the recipe the first time from her son, he was in middle school, the next year her daughter got the same recipe as well as her first home-ec recipe. 

How time flies. 

As for my family, once Regina shared this recipe with me and on the blog, we have made this soup over and over again.

My son Josh makes it for himself now.

As for my daughter, she’s out of law school and has her own place. She told me this soup is still a favorite and makes it when she is looking for some comfort food. 

I want to share one more thing with you all, recently Regina and I met for dinner, outdoor dining. It was such a nice evening.

We both got soup as an appetizer and I happen to mention to her that I make so many of her fabulous recipes, that are still on the blog (Just put Regina in the search and her delicious recipes will pop up) and one of our favorite recipes is this one Home-Ec Ramen Soup.

It really is a great recipe when short on time especially on busy weeknights. 

 

 

 

Home-Ec Ramen Soup

Yields: 4 servings

 What are the ingredients in this delicious looking ramen soup other than ramen?

  •  4 1/2 cups cold water
  •  1/2 cup chopped carrots
  •  1/2 cup chopped celery
  •  2/3 cups sliced mushrooms
  •  1/3 cup frozen corn
  •  1/3 cup frozen peas
  •  2 packs ramen noodles
  •  1 tablespoon minced fresh parsley
  • 1/2 teaspoon onion powder, this is optional
  •  fresh parsley for garnish, optional

Here are the simple directions to make this delightful soup:

  1. Boil water.
  2. Add carrots and boil for 4 minutes
  3. Add celery and boil for 4 minutes
  4. Add mushrooms, corn and peas, then boil for 3 minutes
  5. Add the parsley, onion powder if using, and Ramen noodles, be sure to remove the season packets, boil for 3 minutes
  6. Remove from heat and add in 1 season packet Serve hot (only 1 seasoning packet for the whole recipe, discard the second one or use another time)

Ingredients

  • 4 1/2 cups water
  • 2 packs ramen noodles, I used chicken flavor
  • 1/2 cup chopped carrots
  • 1/2 cup chopped celery
  • 2/3 cups sliced mushrooms
  • 1/3 cup frozen corn
  • 1/3 cup frozen peas
  • 1 tbsp minced fresh parsley
  • 1/2 tsp onion powder, this is optional
  • parsley for garnish, optional

Instructions

  1. 1.Boil water.

    2.Add carrots and boil for 4 minutes

    3.Add celery and boil for 4 minutes

    4.Add mushrooms, corn and peas, then boil for 3 minutes

    5.Add the parsley and Ramen noodles, be sure to remove the season packets, onion powder if using, boil for 3 minutes

    6.Remove from heat and add in 1 season packet, keep on heat another minute or two, bring to a small boil.

    7.Serve hot, enjoy!
