Maria’s Italian Cobb Salad with Simple Parmesan Dressing

My dear friend Maria is also a food blogger. We met on Facebook and became close friends almost right away. It’s close to almost 9 years now. She’s in Boston area and I’m on Long Island. We text and talk every single day. There’s always something to talk about. We are able to meet half way in Connecticut for a weekend with our hubby’s and that is the best being together in person.  Her blog is called Maria’s Mixing Bowl. She has so many delicious recipes to see. I’ve made a bunch of them.

This salad recipe I’m sharing with you is just a really simple one she quickly make for her and her hubby Rob regularly.  It’s not fancy and she took the pic with her phone.

She sent it to me because I told her I wanted to share it on my blog since it’s so delish. I make this all the time.

Her dressing is so simple to make and oh wow, it’s so good! I made it tonight and it’s ready for tomorrow nights dinner salad.

Throw whatever you have in the fridge in your salad like Maria did. It’s the best!

Maria’s Italian Cobb Salad with Simple Parmesan Dressing

What you’ll need to make this delicious salad and dressing…

I didn’t add amounts for the salad so you can make as many salads as you like. Sometimes I make one just for myself.

Ingredients:

For the salad

Add what you like and take off, mix and match every time you make one of these salads. These are Maria’s and my suggestions.

  • Romaine lettuce
  • Red leaf lettuce
  • Cucumbers
  • Shredded carrots
  • Sliced tomatoes
  • Cut up scallions
  • Black olives
  • Green olives
  • Ham
  • Prosciutto
  • Parmesan cheese
  • Salami
  • Swiss cheese
  • Munster cheese
Arugula salad, prosciutto with sun-dried tomatoes, slices of mozzarella, capers, seasoned with olive butter and parmesan. A dish for those who monitor their health

For the dressing

  • 1/2 cup mayo, light mayo can be used, not fat free
  • 1 finely minced garlic clove
  • 2 tablespoons finely minced onion
  • 1/2 teaspoon sea or kosher salt
  • 1/4 to 1/2 teaspoon ground black pepper
  • 3 tablespoons grated parmesan cheese
  • 1/2 to 1 tablespoon fresh lemon juice, optional or cold water

Directions:

  1. In a large serving bowl, layer lettuce leaves along with veggies. Roll up meats and cheeses. Lay on top of veggies.
  2. In a small jar or mixing bowl, add or dressing ingredients. Using a small whisk or fork, mix all ingredients until completely combined.
  3. Serve up salad and dollop dressing on top. Mix up and enjoy this delicious meal. Serve with a crusty bread.
