Soft and Chewy Vegan Chocolate Chip Cookies

There are a bunch of chocolate chip cookie recipes on this blog. All are really tasty and delicious. All pretty much totally different from one another. There are a few vegan cookie recipes already but, there’s always room for more.

Being a vegan, I’m always looking for new recipes and on the top of the list has to be chocolate chip cookies. This one was just created yesterday. We happened to meet my daughter Tori who’s now back on Long Island and going to Law School for dinner last night. The taste test was going to happen right after we all finished a delicious Italian dinner. I whipped these out and gave my hubby, son Josh and Tori two cookies each. I figured one is never enough and if they really liked the cookies they would want another on anyway. Thumbs up from all of them!

I asked them to describe the texture. My daughter described them as soft and pillowy. My husband said soft and my son said chewy. So, since I brought a care package for my daughter and since she really liked these. I gave her the rest of them for her and her roommates to enjoy. I was so glad both my husband and son both said practically at the same time “what about us” Promised them as soon as we got home I would bake another batch. That’s what I did. Oh my, I must have had at least 5 of these cookies between the first and second batch. They really  are delicious! Bake a batch today and watch them disappear.

Fudgy Dark Chocolate Dutch Brownies

If you are looking for a rich, dark chocolate brownie. You found it right here. In most of my recipes I usually use regular unsweetened cocoa or cacao powder. Sometimes when I want a really deep flavor of chocolate, I use Dutch processed cocoa. You will find Dutch cocoa in many of the store bought cookies. It’s very mild and has the most amazing chocolate aroma. Give this fudgy brownie a try. Next time at the market, pick up a container of Dutch cocoa powder. It works in so many great recipes.

Shortcut Autumn Butternut Squash Soup

This soup is my go-to recipe when I want to whip up something fast for my family or a healthy, quick lunch for myself. I work out of the house blogging all day and, since I’m testing recipes most days, there had to be a fast and delicious lunch I could grab after tasting so many other recipes. This one was and is just perfect. For dinner, we have a salad and some nice crusty bread and we have a warm, satisfying dinner everyone really enjoys. Try this simple and delicious soup. OMG Best Tahini Brownies Ever-Vegan Too!

Recently when shopping, I bought tahini to use in a salad dressing. It’s creamy and very rich tasting yet healthy. I had heard about baking with tahini and we have two tahini truffle recipes that are on the blog and are a huge hit. Frozen Raw Tahini Truffles and  Decadent Chocolate Tahini Truffles  

Since these two truffle recipes are so decadent tasting, I decided to come up with a brownie recipe. So, here it is. I named them after the reaction everyone who had one said. OMG! These are the best brownies! Give this one bowl recipe a try. It’s easy and so delish!

Loaded Acai Avocado Banana Bowl

 

Have you enjoy Acai before? If not, you will be so happy when you do. It’s become very popular in the last few years. A friend introduced me to this amazing recipe in a vegan shop over the summer. Now I’m sharing it with you. My kids love this and so does my husband.

Fresh Eggplant Tomato Basil Sauce -No Added Oil

This wonderful homemade sauce came about when my daughter Tori and I came back from shopping for some good fruits and vegetables at a local farmers market. They had baby eggplant that looked so fresh and perfect along with bunches of basil and cherry and grape tomatoes. We grabbed some tomato paste and a can of plain tomato sauce to round out what we hoped would be a delicious homemade sauce. We were not disappointed and so pleasantly surprised how delicious and fresh the sauce turned out. Try this at your home to smell and taste the yumminess!

Nut Butter Tofu Toast with Chia Seeds and Apple Slices

The other day, I was scrambling for a quick breakfast. I had just gone to the market and bought a loaf of sprouted bread with a few new packages of my favorite silken firm tofu. I like the tofu that’s in a vacuumed sealed carton. It’s so silky and smooth. I grabbed some nut butter, this time peanut butter but, cashew and almond butters work great too. For nut free butters, try sun butter. My son likes the packages of apple slices and grabbed a pack along with my beloved chia seeds. So, here you go, the most delicious and quick breakfast or lunch, snack, you name it anytime light meal.
