Simple Broccoli Quinoa Salad

 

This simple broccoli quinoa salad is healthy and oh so delicious. Seasoned just right that the whole family will enjoy.

Quinoa is the darling of the healthy living world for a long time now. It’s great for vegan, vegetarian, paleo, gluten free, clean eating, you name it.

My dear friend Regina came up with the simple and healthy recipe. I’m so glad she shared it with me so I can share it with all of you. 

Just about every way of eating, can use quinoa in their recipes and diets.

If you are looking for a simple and satisfying vegan meal, you are in the right place.

This was so easy to prepare and versatile at the same time.

For added protein, top with grilled chicken, salmon, steak, and for those following a vegan or vegetarian diet, grilled or baked tofu is just delicious served this this quinoa dish.  Add in more veggies if you like but, it’s sensational just as is.

Simple Broccoli Quinoa Salad

Yields: 2 servings

What you’ll need to make this simple broccoli quinoa salad…

Ingredients:

  • 1 cup quinoa uncooked
  • 1 1/2 cups cold water
  • 1 pound fresh broccoli, coarsely chopped
  • 1 tablespoon basil, finely chopped or 1/2 tsp dried basil
  • 3 tablespoons olive oil
  • Zest of 1 lemon
  • Juice from 1/2 a lemon
  • 1/2 teaspoon sea salt plus a pinch for boiling water. Add more salt to taste after dish is complete.
  • 1/4 teaspoon ground black or white pepper, or to taste

Directions:

  1. Place quinoa in a strainer or sieve. Run cold water over the dried quinoa a few times. Shake off excess water.
  2. In a medium pot, add quinoa and water, with a pinch of salt.  Cover, bring to boil, then reduce to a simmer for 10 minutes.
  3. Remove from heat, let stand for 5 minutes, then fluff with a fork.  Set aside.
  4. In a food processor, add broccoli in batches and pulse until coarsely chopped or, chop by hand.
  5. Combine all ingredients in a large bowl, then toss.
  6. Place in fridge until chilled. Serve up and ENJOY!
