Asparagus is a very healthy vegetable that’s also versatile in so many dishes. Fresh or cooked. It’s a unique flavor that has become very popular in the past few years.

I really like this simple recipe. It brings out the natural sweetness in the asparagus. Next time you see a good bunch, grab it and make it this way. I bet everyone you serve it to will adore it!

 

Simple Oven Grilled Asparagus

Yields: about 4 side servings

 

Ingredients: 

  • 1 large bunch thin asparagus spears, rinsed and trimmed of the woody ends.
  • 1 – 2 tablespoons extra virgin olive oil
  • 1 clove garlic, finely minced, or 1/2 tsp garlic powder
  • 1 teaspoon coarse sea or kosher salt
  • 1/2 teaspoon ground black pepper, optional
  • 1 1 2 teaspoons fresh lemon juice

Directions:

  1. Preheat oven to 400 degrees
  2. Place asparagus in a Ziploc bag or large mixing bowl, toss with olive oil, garlic, and salt. Pepper if using.
  3. Arrange spears in a single layer on a grill pan or sheet pan. Cook for about 12 to 16 minutes. This will depend of how thick or thin the spears are. After 7 minutes, you can shake the pan or with tongs, turn the spears over. This will give the asparagus the lovey grill  marks.  Taste a one spear after 12 minutes to see if it’s tender to your liking. Take out of the oven, place on serving platter. Drizzle lemon juice over the grilled asparagus. (The bright taste of lemon is great over asparagus) Enjoy this delicious, healthy side dish.
