Simple Stir Fry Veggie Sesame Noodles

 Here’s a great weeknight dinner idea that the whole family will adore. No need to run out and buy this dish when you can easily make your own simple stir fry veggie sesame noodles in no time at all. Enjoy!

 

My family loves this recipe.

I usually make it once a month.

Sometimes this is a side dish for a steak, chicken, or shrimp.

However, they love this delicious dish as is.

But, many times I make this as the main dish by adding shrimp, chicken, steak right mixed in.

Also, for those of you that want a vegan or vegetarian dish, add in some tofu.

You can sauté the tofu or just toss in the hot noodles. The tofu will pick up the sauce and it will be just so great tasting.

 Most of the time, they like it just as is with lots of veggies and no added protein.

It’s a hearty meal in itself.

Simple Stir Fry Sesame Noodles

What you’ll need to make simple stir fry sesame noodles…

 

Ingredients:

  • 16 ounce package spaghetti or linguine noodles, whole wheat spaghetti noodles also work well
  • 4-6 cloves garlic chopped finely or minced
  • 1 small onion finely chopped
  • 4 tablespoons sugar
  • 2 tablespoons honey
  • 6 tablespoons canola, avocado or grapeseed oil
  • 6 tablespoons rice wine vinegar
  • 6 tablespoons low sodium soy sauce or tamari sauce
  • 2 tablespoons dark sesame oil
  • 1 1/2 teaspoons chili sauce
  • 1 1/2 cups shredded carrots, I used the bag from the market
  • 1 cup frozen peas

    Topping:

  • 4- 6 green onions/scallions chopped
  • 2-3 teaspoons white sesame seeds, toasted in dry pan for just about a minute or until you see a slight golden color. Try not to over toast or burn
  • dash ground black pepper
  • cilantro, chopped, optional

There’s just five simple steps to make this totally delectable dish…

 

Directions:

  1. In a large pot of boiling salted water, cook pasta until al dente. Read package for complete directions. When cooked, drain and place in a large serving bowl, cover with foil. Set aside.
  2. Place a large non stick pan over medium to high heat. Add vegetable oil then onions, garlic and carrots. Cook until onions are transparent.
  3. Add in all the other ingredients except toppings. Bring to a boil and stir to dissolve sugar and all is combined.
  4. Pour over cooked pasta and toss gently but well until all the pasta is coated. I used tongs and then two spoons.
  5. Garnish with toppings.
