Healthy Baked Stuffed French Toast Cups

These healthy baked stuffed french toast cup is one of my kids’ favorite breakfast to make with me. We love it for a delicious snack or dessert too. One cup has only 97 calories so you can indulge without the guilt. So, have two!  I hope you make this with your family or a special treat just for you! It’s a really simple recipe. Look how pretty the presentation is.

I came up with this recipe many years ago when my kids were still little. It’s now a staple in my house and my son Josh who’s now 17 makes this for himself seriously all the time. It’s a heathy way to eat French Toast. Make some soon, use any bread you like. We use the low calorie one to keep the calories and fat down. But, any bread works. I hope you all give this a try and love it like we do. 

Healthy Baked Stuffed French Toast Cups

Makes 4 servings

Nutrition: Per cup – calories 97, fat 2.4, carbs. 11.8, fiber 1, protein 6.8

 

 

What you’ll need to make some healthy baked stuffed french toast…

 

Ingredients:

  • 2 large egg whites or 1/2 cup Egg beaters (or any other brand )
  • 3 tablespoons milk of choice
  • 3/4 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • 1 teaspoon honey or maple syrup
  • 4 slices light whole wheat bread (40-50 calories per slice, or your favorite bread)
  • 1/2 cup part skim ricotta cheese
  • 1/2 tsp vanilla extract for the ricotta mixture
  • 1 cup blueberries, raspberries, strawberries (or use your favorite fruit. You can use more than one fruit or just have one – my picture shows only one fruit)
  • 1 1/2 tablespoons all fruit jam/ jelly
  • orange zest (optional)
 

Here’s the healthy and easy way to make this recipe…

 

Directions:

  1. Preheat oven to 375 degrees.
  2. Spray a non-stick muffin pan with cooking spray.
  3. In a large bowl, whisk the egg beater, milk, cinnamon, and the one teaspoon vanilla together.
  4. Cut off the crusts of the bread. I save the crusts and use for fresh bread crumbs. (keep in fridge until ready to use) 
  5. Carefully dip each slice of bread into the egg mixture. Then, press into the muffin pan.
  6. Bake at 375 degrees for 11-14 minutes (until you see them getting crispy). If you see some of the egg in the middle of the cup just push it down with a spoon and continue to bake until ready.
  7. In the meantime, warm the jam in the microwave for 11-15 seconds. The jam should now look more like a liquid.
  8. In a small mixing bowl, mix the ricotta cheese, honey, and half teaspoon of vanilla until smooth.
  9. When the cups come out of the oven, wait a minute or two and take them out of the pan using a butter knife. Just use to lift one corner. 
  10. Spoon the ricotta mixture into each cup. Sprinkle the berries (or other fruit) on top and spoon the fruit spread over each cup. Add the orange zest (optional). Enjoy!
