Purple Frosted Vanilla Cupcakes 

These Purple Frosted Cupcakes are a fun and yummy treat to make with the kiddos. Love the shade of purple frosting we created. 

 

 

Halloween is such a fun holiday for the whole family.

My kids and I love decorating the house and especially the outside.

My son Josh goes crazy with the scary decorations.

When he was younger, he asked me if we could make scary looking cupcakes. Of course I said yes.

It’s now a Halloween tradition for the two of us to do.

We both look forward to making these cupcakes sometime around Halloween so we can give them out to our family when they stop by or when my son has some friends over to visit.

  It’s so easy using a boxed mix and frosting. Just add your favorite food coloring along with funny and spooky decorations.

You can find so many Halloween colored sprinkles in most markets and craft stores as well as Amazon.

My daughter was shopping at Target and Walmart and found some pretty purple sprinkles that I used in these cupcakes. She knew I was going to start my Halloween baking soon and brought me those as a gift.

I will highlight a few in the ingredients so you see the ones I get each year.

Purple Frosted Vanilla Cupcakes

Yields between 18 – 24 regular size cupcakes

What you’ll need to make purple frosted vanilla cupcakes…

Ingredients:

Simple and fun directions:

  1. Preheat oven to 350 degrees, place foil or paper cupcake liners in two 12 cupcake pans or a 24 cupcake pan. Set aside.
  2. In a large mixing bowl, dump mix and with a whisk, break up any little clumps. Add the rest of the ingredients except frosting and food coloring. Mix well to combine. You can use an electric mixer and beat for 2 minutes or whisk by hand. Make sure you use a rubber spatula to dig down deep and incorporate all dry ingredients into the wet.
  3. Using a 1/3 measuring cup, pour batter into prepared tins. Bake for about 15- 17 minutes. Check after 12 minutes. Tops should spring back and dry crumbs should be on toothpick when tested. Let cool completely on a wire rack.
  4. Open frosting tub, add food coloring right into the frosting tub. Remember to follow the directions as to how many drops for the right color. Mix well with a small rubber spatula or spoon.
  5. When cupcakes are cool, have fun frosting and adding all your favorite decorations.

  • 2 egg whites
  • 1/4 tsp vanilla extract
  • 5 tbsp coconut oil, melted and cooled slightly
  • 1/2 tsp baking powder
  • food coloring
  • sprinkles of choice
  • decorations for the top
