My Mom’s Meatloaf Recipe

  This really is my mom’s meatloaf recipe. Comes out so moist with lots of wonderful flavors. See her secret ingredient to make this meatloaf so tender.  I loved this as a child and still love it today and so does my family. 

 

My mom Ruthie made this meatloaf recipe way back when I was a little girl.

She would make it with ground beef for many years then switched to chicken and turkey.

It’s so delicious. I finally asked her for the recipe years ago.

My mom said, “what recipe?” That was my mom. I bet many of you can relate. LOL! So many of our mom’s and grandma’s didn’t write anything down but, they sure remembered every single recipe. 

I told her to put down from memory what she puts in it. So here goes. 

My daughter Tori made the “recipe” and it came out tasting just like I remembered.

This has become a staple now.

My son Josh and hubby Alan love it so much, I make it once a week and there’s enough leftover for cold meatloaf sandwiches the next day.

I really can’t think of any better lunch than a cold meatloaf sandwich. If you haven’t had one, it’s a must after you’ve made this meatloaf recipe.

My Mom’s Meatloaf Recipe 

Yields: 4 servings

 

What you’ll need to make my mom’s meatloaf recipe…

Ingredients:

  •  ground chicken or turkey, ground beef can be used too. 
  • quick oats, and oat flour, instead of using just one or the other, I use both. Of course you can use just oats but, I like a little less texture from the oats and the oat flour gives a nice smooth texture with the same bulk and nutrition added. it’s found in most markets with the other flours or online here
  •  plain bread crumbs
  •  plain seltzer, this is my mom Ruthie’s  secret ingredient for a tender meatloaf. It really makes a big difference
  •  Worcestershire sauce
  •  ketchup, a must for all meatloaf recipes
  •  onion soup mix
  •  garlic powder
  •  turmeric
  • smoked paprika, optional 
  •  coarse salt
  •  ground black or white pepper
  • 1 large or extra large egg
  • For topping

  •  ketchup, again, ketchup on top of a meatloaf is a must

 

 

 

 

 

 

Directions:

  1. Preheat oven to 350 degrees. Cover a baking sheet with no stick aluminum foil and spray with cooking spray or squeeze out ketchup.(Or use a disposable aluminium pan) Set aside until ready.
  2. In a large mixing bowl mix all ingredients with a wooden spoon. My mom gets her hands in there. She says it gets everything mixed up the best. The most important thing is, don’t over mix. The meatloaf will be much more tender.
  3. Shape into a loaf and zigzag the ketchup on top smooth with a spoon or leave as is.  bake for about 1 hour or check with an instant read thermometer reads 165 degrees. (Check after 50 minutes) If meatloaf is getting too brown on the bottom or top, cover with tin foil if needed.
  4. Let sit out on the counter for about 10 minutes before slicing. My mom always served this with egg noodles and she mixed in some melted butter to the noodles to break them up and give a nice sheen and flavor.

Ingredients

  • 1- 1/2 pounds ( this one was 1 1/2 pounds) ground chicken or turkey, ground beef can be used too.
  • 1/4 cup plain bread crumbs
  • 1/2 cup quick oats, or, use oat flour ( I used oat flour, found in most markets with the other flours or online here
  • 1/8 cup plain seltzer, this is her secret ingredient for a tender meatloaf
  • 2 tbsp Worcestershire sauce
  • 1 tbsp ketchup
  • 1/2 packet onion soup mix
  • 2 tsp garlic powder
  • 1 tsp turmeric
  • 1 tsp smoked paprika, optional
  • 1/4 tsp coarse salt
  • 1/2 tsp black or white pepper
  • 1 large egg

Topping

  • 1/4 cup ketchup

Instructions
