123 Berry Cobbler 

This recipe for 123 berry cobbler is so simple and easy to throw together. Bursting with berries with a delicious crunchy cobbler topping. Bake one up and enjoy! 

Three ingredients and just a few steps to a delicious berry cobbler. 

This is one of my go-to dessert recipes when I need a last minute dessert.

Everyone that ever had this cobbler loved it.

My family adores it too.

Recently we had friends visit, they just popped in on a Sunday afternoon.

We were not expecting anyone and the house was not in the best shape.

Breakfast dishes in the sink and newspapers all around.

They didn’t care of course.

I always have frozen berries in the freezer because I make a smoothie almost every weekday morning for breakfast.

I grabbed a can of seltzer and a cake mix, whipped this up in just a few minutes and sat in the kitchen with our friends while the house started smelling wonderful while this baked.

Then, we all enjoyed a nice big portion.

My husband asked if there was any vanilla ice cream in the house, isn’t there always?

Well, it tasted amazing with a scoop planted on top. The warm cobbler and the cold ice cream.

Total deliciousness that is for sure. Bake one of these up soon, taste what I’m talking about.

 

123 Berry Cobbler

Yields: 8 servings

WW Personal Points – Using sugar free cake mix: 3 

WW Personal Points – Using regular cake mix: 8 

 

 

What you’ll need to make this 123 berry cobbler…


Ingredients:

  • About 10 ounces of frozen fruit, ( Do not thaw)
  • 1/2 box of white or yellow cake mix, I used Pillsbury sugar free cake mix this time. Or, regular cake mix any brand.(Do not prepare the cake mix, only the dry is used.)
  • About half a can of seltzer, I used plain but, you can use any flavor
  • 1/2 tsp vanilla extract, optional

 

Here’s the quick and easy way to make this scrumptious dessert…

 

Directions:

  1. Preheat oven to 350 degrees.
  2. Place frozen fruit ( remember, don’t thaw) in the bottom of a round or square glass or ceramic baking dish (about 8 or 9 inches) that has been lightly misted with cooking spray. Set aside for just a few minutes.
  3. In a mixing bowl, add the half box of cake mix and about 6 to 7 ounces of seltzer and gently mix together. If you are using the vanilla, this is the time to add it.
  4. Pour mixture over the frozen fruit. Bake uncovered on the top rack of your oven for about 30 to 40 minutes or until golden brown. You may see the fruit bubbling a little too.
  5. Let cool slightly for just a few minutes and dig in!

 

Great with a scoop of vanilla ice cream or whipped cream, yum!
