Cooking Zucchini Coins With My Son Josh

Cooking and baking with kids is such a joy. This original recipe was made as a school project that my son Josh had to do at home. We wrote about the fun we had and Josh called the article Cooking Zucchini Coins With My Mom” 

He included the recipe along with the photos that you will see below. For My recipe and post I’m calling this Cooking  Zucchini Coins With My Son Josh.

The delicious recipe for zucchini coins came out so delicious and most of all my son and I had such a great time in the kitchen making them together. 

 

My son Josh is almost 16 years old. These photos were taken a few years ago when he was 11.

Recently, we made these again but he wouldn’t let me take a recent photo of him. Well, he’s now a teenager. At 11 he didn’t care. Well, I’ll have to try and take one when he’s not looking. LOL.

When he was 10 he became interested in cooking and baking. We watched the cooking shows, and Josh especially liked  the programs where kids are competing.

It’s fun seeing all the creations these talented kids are making. I told Josh maybe one day he will be on a cooking show if he keeps up with his interest in cooking and baking.

So, that brings me to this recipe today. When Josh was in 5th grade he had an assignment in class to go into the kitchen with someone from his family to make a recipe that’s a favorite of his.

Then, he was to share the recipe and photos with his class. The class had just finished a teaching book called “Saturdays and Teacakes.” It’s a story about a ten-year-old boy who rides his bike every Saturday to visit his grandma, who he calls Mammaw.

They mow the lawn, pick vegetables, eat lunch together and the most special time with his grandma was when they baked teacakes together.

As it was said in the book, a memory he will never forget.

This was right up both our alleys since we already love to cook and bake together.

The whole family really enjoyed these delicious zucchini coins, as Josh calls them.

I’m betting it’s sure to become a recipe your whole family will love the way we do.

I know that this recipe for “Cooking Zucchini Coins With My Son Josh” will always be my favorite recipe. Well, I guess until the next one we cook together.

What’s In The Recipe Cooking Zucchini Coins With My Son Josh…

Here are the ingredients:

  •  plain bread crumbs
  •  grated parmesan cheese
  •  sea or kosher salt
  • ground pepper
  •  garlic powder
  •  skim or low fat milk
  •  small to medium zucchinis, rinsed, dried, and cut into coins
  • olive oil cooking spray

How Do You Make These Fun And Yummy Looking Zucchini Coins…

Here are the simple and easy directions:

  1. Preheat oven to 425 degrees, place parchment paper on a cookie sheet and set aside.
  2. Combine first 5 ingredients in a medium bowl. Mix around with a whisk.
  3. Pour milk into another bowl.
  4. Dip coins into milk first, then coat with breadcrumb mixture.
  5. Place on prepared cookie sheet. Spray with cooking spray over coins. Turn coins over after 15 minutes to brown on both sides. Bake for another 15 minutes or until crispy and lightly browned.
