Deli Style Pasta Salad

Here is a homemade version of my family’s favorite pasta salad that’s from a neighborhood deli on Long Island, New York. Try this delicious deli style pasta salad recipe and enjoy!

 

Years ago when my son was a baby I would put him in the stroller and walk to the small shopping center right near our house.

There was this a really great deli where I would buy a big portion of their pasta salad along with deli meat for my hubby.

He really enjoyed a sandwich with a side of the deli’s pasta salad.

I would eat the pasta salad for my lunch.

My son would love it too. I’d cut it up and put small pieces on his little tray. 

One day, I decided to prepare one at home.

The week earlier when I picked up the pasta salad I had asked one of the men behind the counter what is their secret to the dressing.

He was so nice he told me.

I quickly got it down on a piece of paper and stuck it in my bag.

My cell phone at the time didn’t have any kind of text. So, I had to go the old-fashioned way and grab a pen find a piece of paper and write it down.

How did we get along without cell phones? LOL! 

When we were finished with the deli’s pasta salad I got to work and made it on my own.

It came out great and now I make this regularly.

Sometimes I add chicken or steak for a main dish.

They also made the most delicious potato salad. I was really happy that I got to jot down what they put in their potato salad before they closed their doors for good. One of these days I’ll attempt that recipe.

Deli Style Pasta Salad

What’s in a deli pasta salad?


Here’s the simple ingredients:

  • 12 ounce box tri- colored Rotelle cooked and drained
  • 1 cup diced carrots
  • 1 cup mixed red and green peppers
  • 1/2 cup cut up celery
  • 1 large tomato cut into small cubes
  • 1/2 cup frozen corn, thawed
  • 1 cup cubed cheese, I used white cheddar
  • 1/4 cup mayo
  • 1/4 cup extra virgin olive oil
  • garlic powder and onion powder to taste
  • coarse salt and pepper to taste
  • fresh parsley and basil, chopped to taste and more for garnish

How is this pasta salad prepared?

 

Here’s the easy directions:

  1. In a large serving bowl, add all veggies and cheese. Toss and set aside.
  2. Mix the mayo and oil with a mini whisk or fork until well combined.
  3. Add spices and toss gently into the pasta salad. Cover and place in fridge for at least 2 hours. When you take the salad out, toss again very gently and sprinkle more parsley and basil for a presentation.

This is a copycat version of a New York deli pasta salad I used to buy years ago. Easy to make at home and tastes just like the original. Total deliciousness. Enjoy!

Ingredients
