I have wanted to make another peanut butter cookie for you that would be gluten free, since our first PB cookie has been a huge hit. The problem is peanut butter does have a lot of fat. I needed to cut the fat to be able to put this recipe up on Skinny Sweets Daily.
I have used reduced fat peanut butter in other recipes, so I figured why not try it in this recipe as well. So, by cutting the amount of regular peanut butter and using the reduced, cutting out flour completely and cutting down on the sugar, it all worked out. I was very pleased with the finished product and so was my family. I hope you all love these as much as we do. They literally melt in your mouth. Oh, by the way, they are also low carb, low sugar too!
