 Here’s a recipe for lemon glazed cookies that’s sure to become a family favorite. My kids loves these cookies. They are requested at many family gatherings. Bake a batch and taste the lemony yumminess!

I think everyone has his or her favorite lemon cookie recipe.

Well, here’s one of mine.

This particular recipe is a softer more cake-like cookie.

My kids describe them as pillowy.

They come out soft with a nice lemon flavor.

We think these have the the most wonderful cookie texture. 

The recipe is so easy to make that it can be easily made during the week for a yummy lemon cookie dessert. However, these travel well and are just perfect for potluck dinner dessert, picnics, barbeques, also to wrap up and give as a delicious edible gift. 

The cookies have a bright and lovely taste from the fresh lemon juice.

I bet these will become a family favorite too.

Oh, like I mentioned before, they make such nice edible gifts, my son gives them out to his teachers at the end of the school year. Also, it’s a nice treat for anyone you care about. Homemade lemon cookies are the best!

 

 Lemon Glazed Cookies

Yield: 36 cookies

 

 

What you’ll need to make a batch of these lemon glazed cookies…

 

Ingredients:

 

    • 2 cups all purpose flour
    • 1 tsp baking soda
    • 1/2 tsp baking powder
    • 1/2 tsp fine sea or kosher salt
    • 1 stick butter or margarine, softened
    • 3/4 cup granulated sugar
    • 2 tbsp granulated sugar
    • 2 large eggs
    • 2 tsp vanilla extract, use a good quality for best taste
    • zest of 1 medium lemon
    • 2 Tbsp fresh lemon juice
    • 1 6-ounce container vanilla Greek yogurt

Glaze:

  • 1 cup powdered sugar, sifted
  • 3/4 tsp vanilla extract
  • A teaspoon or two of fresh lemon juice
  • A few drops of water for a smooth glaze

Fresh lemon juice is wonderful in so many recipes

Directions:

  1. Preheat oven to 350 degrees. Line 3 cookie sheets with parchment paper and set aside.
  2. In a large mixing bowl, cream the softened butter using an electric mixer, then add the sugar slowly and mix until light and fluffy. Add the eggs one at a time, vanilla extract, lemon zest, lemon juice, and yogurt.
  3. Start adding your dry ingredients, flour, baking soda, powder and salt. Mix until well combined. Take a rubber spatula and make sure you scrape the bottom of the mixing bowl to combine all ingredients.
  4. Using a small cookie scoop, place 12 mounds on each cookie sheet. With clean wet hands, slightly pat down just a little. Bake one cookie sheet at a time on the middle rack and rotate after about 5 minutes. Bake for about 10 to 13 minutes until light brown. Take out and let cool on a wire rack. Continue until all cookies are done and cooled.
  5. While the cookies are cooling, make your glaze. In a small mixing bowl, combine the powdered sugar along with the vanilla extract that’s been mixed into the water and lemon juice. You want a smooth, slightly runny glaze but one that will stay on the cookie.
  6. With a small spoon or the tines of a fork drizzle over each cookie. Let set up a few minutes. When set, serve to everyone you love!
