Luscious Lemon Bars

Here is an easy recipe that’s sure to become a family favorite. It sure is in my house. These luscious lemon bars are made with the ever loving Bisquick. They have the most delectable flaky crust. Bake a batch and enjoy the lemon lusciousness!

 

I’m sure you have seen recipes for all different kinds of lemon bars all over Facebook and Pinterest.

Oh yea, there are a lot out there.

When I decided to try a new recipe for luscious lemon bars, I wanted it to be an easy one or should I say a shortcut version.

Well, by using my all time favorite Pantry item, I came up with these lemon gems.

I’m talking about Bisquick! It’s my go to for so many recipes, both sweet and savory.

I’ll post a few more recipes using Bisquick down below for you to check out.

Now, these luscious lemon bars took a few tries and this one was the winner. So, it was time to post on my blog.

My family loved them and they are not even big lemon fans like I am.

The crust is so flaky and light thanks to Bisquick.
And, it only takes 3 tablespoons of butter for the whole recipe.

So, next. time you are in the mood for a lemon dessert, try this recipe. It’s easy to make and it really is lemony delicious. 

Luscious Lemon Bars

Yields: 9 to 12 bars ?

 

 

WHAT ARE THE INGREDIENTS THAT GO INTO THESE LUSCIOUS LEMON BARS…

Here they are:

First for the crust:

  • 1 cup Bisquick baking mix, regular or Heart Smart
  • 3 tbsp packed powdered sugar
  • 3 tbsp unsalted butter — very cold and cut into small pieces

Now for the filling:

  • 3/4 cup granulated sugar
  • 1 large egg
  • 2 egg whites from large eggs
  • 1 heaping tbsp Bisquick 
  • 2 tsp lemon zest
  • 1 1/2 to 2 tbsp fresh lemon juice
  • 1/4 tsp vanilla extract

Can’t forgot the luscious glaze:

  • 1/2 cup packed powdered sugar
  • 1 to 2 tsp lemon zest or to taste
  • 2 tsp fresh lemon juice + a little cold water — if needed for a nice smooth consistency
  • colored sprinkles for garnish, optional

HOW ARE THESE LUSCIOUS LEMON BARS MADE…

Here are the simple and easy directions:

  1. Preheat oven to 350 degrees, lightly mist the bottom only of an 8 inch square baking pan with cooking spray. Set aside until ready to fill.
  2. In a medium mixing bowl, mix together the crust ingredients except the butter.
  3. Use a whisk to sift the dry mixture.
  4. Add in the cold butter and with a pastry blender (a very good tool to have in the kitchen) or 2 butter knives. Mix in the butter until the mixture looks like medium size crumbs. Don’t worry that it looks like there’s not enough butter – there is.
  5. Add crust to the baking pan and press down. It’s still going to look and feel like there’s not enough butter but it will come out great. Try to make the crust level.
  6. Bake for about 9 to 11 minutes or until very lightly browned. Take out of the oven and set on a cooling rack.
  7. Mix all the filling ingredients. You may want to use the whisk again and then switch back to a rubber spatula to make sure you get all the ingredients from the bottom well incorporated.
  8. Pour this mixture over the warm crust. Bake about 20 to 27 minutes or until the filling is set and the color is golden.
  9. Take out of the oven and place back on the cooling rack. Wait about 15 minutes and then with a butter knife, loosen the corners from the pan.
  10. In a small mixing bowl, mix the glaze until desired consistency, make sure there are no lumps and pour and spread over the bars. If using sprinkles, pour them over now. Cool completely and then cut into 12 bars.

Ingredients

Glaze

  • 1/2 cup packed powdered sugar
  • 1-2 tsp lemon zest or to taste
  • 2 tsp fresh lemon juice + a little cold water — if needed for a nice smooth consistency
  • colored nonpareils for garnish, optional
