Crystal’s Mini Pecan Pies

Pecan pie is very rich and sweet. These mini pecan pies are just as good, and little healthier for you. Enjoy!

Crystal’s Mini Pecan Pies

Makes 24 mini pies



  • 6 graham crackers sheets
  • 2 tablespoons melted butter


  • 1/2 cup pecans
  • 24 pecan halves
  • 2 eggs
  • 2 tablespoons melted butter
  • 1/4 teaspoon salt
  • 1/4 cup light corn Syrup
  • 2 tablespoons brown sugar


  1. Melt 2 tablespoons of butter and set aside to cool.
  2. Place the graham crackers into a food processor or a small food grinder.
  3. I used our 4 cup chopper for this small job. Chop until the graham crackers become crumbs. Add to a small bowl and add melted butter. Mix until well incorporated.
  4. Press the graham cracker mixture into the bottom and up the sides of the mini muffin tins and set aside.
  5. Melt 2 more tablespoons of butter and set aside to cool. Add 2 eggs to a medium size bowl and beat. Add brown sugar, salt, corn syrup, cooled melted butter, and mix well. (Note: If the butter is too hot when you add it to the egg mixture, it will cook the eggs.)
  6. Add the half-cup chopped pecans and mix.
  7. Add the pecan mixture to the muffin tin.
  8. Place a pecan half on top of each mini pie.
  9. Bake for 10-15 minutes or until done.
  10. Let cool before removing from muffin tins
