I am so lucky that my sweet and talented friend Regina has shared so many of her amazing recipes with me over the years.

Now, you all get to enjoy these delectable sweet and savory recipes too.

Not only is Regina a wonderful cook, decorator, and gracious hostess when she has dinners and parties, she is a fabulous baker as well.

How she made the recipe easier than the original way of making these cookies, I don’t know. What I do know is they are so good.

Now, each year around the  holidays and even if it’s not a holiday but a special occasion, I’ll bake a batch of these because everyone loves them and I mean everyone!

Just like this Pork Schnitzel. It’s stands alone for any pork dish, yet it’s such an easy recipe. 

For someone who has never eaten pork before, this would be the recipe for them to try first. It’s beyond delicious with it’s crispy coating and juicy meat inside. The whole recipe has only a handful of ingredients. It’s one of those easy-peasy recipes that everyone loves to make for that reason alone but, the best part is how delicious this pork schnitzel comes out.

“I am not quite sure where I got this recipe from, but it has become a family favorite.

 It is a marvelous alternative when cooking that second portion of pork tenderloin that comes in the package.

 I usually request that my butcher separates the package in two and trims the silver for me.

 They do it so quickly and it is one less thing I need to worry about especially on a busy weeknight. 

I hope you enjoy this German twist on the pork tenderloin as much as we do.”

Perfect Pork Schnitzel

Ingredients

  • 1 Pork Tenderloin
  • 1 cup milk
  • 2 cups plain bread crumbs
  • 2 tbsp flour
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 2 tbsp olive oil
  • lemon for garnish

Instructions

  1. 1.Place milk into a medium bowl.

    2.Remove the silver from the pork tenderloin, then slice into 1 1/2 inch pieces (resembling mini boneless pork chops). Pound with a meat tenderizer until flattened. Then place in bowl with the milk.

    3.Mix together the bread crumbs, flour, salt and pepper.

    4.Add oil to a fry pan and heat on medium.

    5.Bread each piece of pork and fry on both sides until golden. About 4 minutes on each side.

    6.Serve hot with fresh lemon to drizzle over if so desired.
