Quinoa Feta Salad

This is a most delicious and tasty Quinoa Feta Salad that you can make in under 30 minutes Great as a main course or a side. 

This wonderful recipe comes from my dear friend Regina. She is an amazing cook and baker.

Regina originally made this quinoa feta salad for a boy scout meeting and everyone loved it. The boys included, not just the parents.

It’s so simple and easy to throw together and great for a light lunch and as a side dish for dinner and then again for lunch.

Add some grilled chicken, salmon, steak, even tofu for an added boost of protein. But, the quinoa has a nice amount of protein and it’s just one delicious recipe. Thanks to Regina for all her delectable recipes. I will post a few more down below. Wait until you try her rainbow cookies, they are the best!

What you’ll need to make this tasty quinoa feta salad…

 

Ingredients:

  • 1 cup quinoa (=3 cups cooked)
  • Juice of 2 lemons, about 1/4 cup
  • 1/4 cup olive oil, extra virgin olive oil works the best in this recipe
  • 1 English/hot house cucumber, seeded and diced
  • 2 cups cherry tomatoes, cut in half
  • 1/8 teaspoon dried cilantro
  • 1/2 teaspoon ground pepper
  • 1/2 teaspoon coarse sea salt
  • 2 cups feta cheese, diced

Here’s the easy way to make this outstanding quinoa feta salad… 

Directions:

  1. Cook the quinoa as per the package directions.  Set aside to cool.
  2. Combine the remaining ingredients in a large bowl, minus the feta.  Add the cooled quinoa and mix well.  Then fold in the feta.
  3. Serve at room temperature or refrigerate and serve cold.
