While out shopping earlier in today in my local grocery store, walking down the freezer aisle, I was grabbing some bags of frozen corn when I saw bags of mini corn on the cobs on sale. 

My kids like the mini ones so I grabbed four bags since I had space in my freezer, which is rarely the case but this time I did.

I’m so glad because this corn came out fantastic.

It happen to be raining that same night I was going to grill these little corns on the outdoor grill which was  the usual way when it’s nice weather. 

No one wanted to stand there with the umbrella in the rain that’s for sure and since the meatloaf  was already in the oven, (My mom Ruthie’s recipe, check it out!) the corn was the only thing left to grill.

The rain wasn’t going to stop us eating corn on the cob…

It was raining pretty hard and it didn’t look like it was going to let up anytime soon so I figured to just microwave or boil the corn instead.

I happen to glance over at my new grill pan that I recently purchased on Amazon. It happen to be delivered that same day and was sitting on one of the counters in the box it was shipped in. 

I had been planning to use it the next night to grill some salmon that I got the same day while grocery shopping. I asked my son Josh to pull off all the packaging, washed my new grill pan and decided to grill the corn inside. 

Wow! This is a great way to grill corn.

The natural sweetness came out and it was so good, my kids asked if I could make it  again the next night. So glad I bought the extra bags!

Well, this is now the only way I make corn on the cob. Even fresh corn. No need to start up the outdoor grill for corn on the cob.

  •  Spray olive oil plus 1 tsp salted or unsalted butter
  • sea salt and pepper to taste

Here Are The Easy And Simple Directions: 

  1. If the corn is in a microwavable bag, cook for half the time it says on the bag. If it’s in a regular frozen bag, take corn out, lay on a plate and either let thaw out for about 30 minutes or place in a microwave dish with a few tablespoons of water, cover with wax paper and cook just until the corn is thawed and a little warm. This should take about 2 to 3 minutes. 
  2. Take out, place on paper towels to get off any water or pat dry. 
  3. Heat grill pan on medium. Add oil and butter, let heat up a little, place corn in pan and keep turning around until you have the amount of grill marks on the corn. If needed spray pan or corn with a little olive oil spray. Take out of pan and plate up. Season to taste.

Ingredients
