This recipe is one of many from my dear friend Regina. She is a fabulous cook and baker. 

I’m so thankful she has shared so many of her delicious recipes here on my blog. For more of Regina’s recipes, just put her name in search and you will get a real treat. One of my favorite recipes of hers happens to be a sweet dish called Raspberry French Toast Breakfast Casserole It’s a simple recipe and totally divine. 

Now, back to this wonderful chicken dish.  For such an easy recipe you would think it would have been made with lots and lots of different spices.

But, it’s not. Chinese Spice Powder in one spice. So, with a few choice ingredients and the star of the show, Chinese 5 Spice Powder  this chicken dish will stand out from any other you’ve had before.  

 

What is Chinese Spice Powder?

 

Chinese Spice Powder is a blend of spices such as cinnamon, cloves, star anise just to name a few. It’s all in one jar that gives an authentic Chinese taste to many dishes such as chicken, fish,vegetables, and even some dessert recipes. I saw an ice cream recipe made with a little bit of this remarkable spice.  

There is so much more you can do with this fragrant spice. Be creative and use your imagination, take an ordinary dish and turn it into a delectable one that you won’t forget.

 

 

Where do I find Chinese Spice Powder?

I bought mine online at Amazon , I have gone though a few jars since I started using the spice and the one that I have highlighted is the one I’m using now. But it’s also at many grocery stores, specialty stores and gourmet stores may carry it as well. These days  it’s becoming more popular.

 

 

Can I make the spice at home? 

You sure can. Go online and look up different brands of the spice. See what they have in each one. You may already have the spices in your house. The only thing is, you will have to figure the ratio on how much of each spice. I suggest if you are going to make it yourself, see if you can find a recipe for the spice and go from there.

 

 

Any serving suggestions go offer? 

One that I have used over and over again is, this spice works so well with any earthy, starchy vegetable such as mashed turnips, butternut squash, and sweet potatoes. Probably one of my favorite things to eat. I serve mashed turnips for Thanksgiving every year with the Chinese 5 Spice. And every year the family asks me the same question, “what’s in here?”  The photo of the chicken dish has the mashed turnips made with the spice. Now that you have this recipe, you can print it out below and save it for when you get your Chinese 5 Spice or if you have the spices in the house make it yourself. This is sure to be a family favorite like it is in Regina’s and my home.

 

Chinese 5 Spice Roast Chicken

Yields: about 4 servings

 

Ingredients:

  • 3 1/2 to 4 lb chicken
  • 4 tablespoons butter
  • 2 tablespoons Chinese 5 Spice Powder This is the brand I use
  • 2-3 tablespoons honey
  • 1 large leek
  • 1 fennel bulb
  • 5 large carrots

 

 

 

 

 

 

 

 

Directions:

  1. Preheat oven to 425
  2. Cut the leek, fennel and carrots, then set aside
  3. Melt butter in an oven-proof skillet, then add the honey and Chinese 5 spice
  4. Brush butter mixture over all sides of the chicken
  5. Add cut vegetables into the skillet and coat with any remaining seasoning
  6. Place chicken on top of the vegetables.  Tie the legs and tuck the wings under the chicken.
  7. Roast in oven for 1 hour or until a meat thermometer reaches 165 when inserted into thick part of the thigh
  8. Rest chicken for 20 minutes before carving
  9. Serve with the roasted vegetables

**Some Alternate seasoning options for Roast Chicken: 

  • Curry – 2 inch piece of ginger, thinly sliced; 1 tablespoon Madras curry powder; pinch of kosher salt
  • Maple-Chipolte – 1/4 cup maple syrup; 1/2 chipotle chile in adobo, chopped plus 2 tablespoons sauce from can; 1 bay leaf
  • Mustard-Pepper – 1 tablespoon mustard powder; 1 tablespoon coarsely ground pepper; 1 tablespoon brandy
  • Cajun BBQ – 2 teaspoons smoked paprika; 2 teaspoons cajun seasoning; 1 teaspoon celery seeds; 1 teaspoon garlic powder
  • Moroccan Spice – 2 tablespoons ras el hangout; 1/2 teaspoon cayenne pepper; pinch of kosher salt
  • Lemon-Rosemary – 3 sprigs rosemary plus 1 tablespoon chopped leaves; 5 smashed garlic cloves; 6 wide strips lemon zest; pinch kosher salt
