Simple Cheesy Baked Spinach Dip

This simple cheesy baked spinach dip is a copycat version of  a favorite spinach dip from your favorite restaurant, try this fun and easy recipe out. It’s cheesy delicious, enjoy!

Do you have a favorite restaurant that has the best spinach dip?

We do right in the town I live in.

One day I asked the waiter what they put in the dip. He gave me the main ingredients without amounts and I took it from there.

My husband and son said I nailed it.

But, there’s one thing that’s not in this dip.

It’s the artichoke. We’re not artichoke fans so I left it out.

However, you can certainly add a small can if you want to. Just remember to chop them and drain them well.

Otherwise, you may like this dip as is. We love it. 

This is so simple to throw together and so creamy and cheesy. 

I used low fat cheeses and it came out great.  

Make it for any or no occasion.

Great for a small amount of people like my hubby, son, and of course me.

We finished this yummy hot dip up in record time the last time I made it.

 I doubled it when my daughter and her boyfriend came over to watch the Giants play, and lose. What else is new?

The recipe even triples well for a larger crowd.

Game days, barbecues, just hanging around and wanting something cheesy delicious.

Easy enough to throw together when company comes to visit unexpected. 

I’m sure it will be a big hit. 

 

 

Simple Cheesy Baked Spinach Dip

Yields: 8 – 1/4 cup per serving

 

What you’ll need to make your own simple baked cheesy spinach dip…

  • 10 ounce package frozen chopped spinach or 2 cups thawed spinach
  • 1/4 cup mayo, I used light, not fat free
  • 1/2 cup sour cream, I used light, not fat free
  • 1/3 cup grated or shredded parmesan cheese
  • 1 heaping cup mozzarella cheese, I used half cup fat free and 1/2 cup part skim or use all part skim cheese
  • pinch salt, optional
  • 1/4 tsp ground black pepper
  • 1/4 tsp turmeric powder
  • 1 tsp garlic powder
  • 1/3 cup finely chopped green onions/scallions or 1/4 cup chopped chives

 

Here’s how to make this delicious hot dip…

Directions:

  1. Preheat oven to 350 degrees, spray a baking dish with cooking spray. Set aside
  2. Squeeze out as much water from spinach. Set aside while you mix up all other ingredients.
  3. In a medium mixing bowl, combine the rest of the ingredients until well combined. Add spinach. Make sure you break up the spinach to incorporate into mixture.
  4. Place mixture in prepared baking dish. Bake for about 25 minutes.  You may see some bubbling on the corners of the dish and a little browning on top. If needed, put back in oven for another 5 or 10 minutes until all cheese is melted.
  5.  Take out and serve with your favorite crackers, chips, pita slices, carrot sticks, celery sticks, even cucumbers.
