Have you heard the new craze for chocolates?  It’s having them topped with sea salt?

What does that even taste like?

It didn’t even sound appealing to me when I first heard about it.

Well, that all changed a couple of years ago at a friend’s house.

When my friend first offered me this little candy and I politely said “no thank you”.

First of all, I thought the combo of salt on chocolate  didn’t sound all that great. I always liked chocolate covered pretzels but, this didn’t appeal to me. 

She told me I would be surprised how great the combo was. I decided to try one.

She was so right!

Oh my, that little candy was scrumptious. The combo of the sweet and salty reminded me of a chocolate covered pretzel but, without the crunch and the added caramel was different and so delicious.

As soon as I got home that night, I grabbed the package of caramels from the pantry and made a batch for my family.

Everyone loved them as much as I did. 

Now, a few years later, I was home in the morning catching up on some recipes I needed to post for the upcoming holiday which happened  to be Valentines Day, or as my son calls it chocolate day. 

That got me thinking about those little gems.

It had been awhile since I made any chocolate covered caramels with sea salt.

I decided to change things up so this time around I used bittersweet chocolate for a more intense chocolate flavor. The last few times I used milk and semisweet chocolate.

All work for this recipe. 

Both tasted delicious. I happened to like the milk chocolate the most and my son and hubby liked the dark chocolate more.

My daughter is like me and she’s a big milk chocolate fan. 

As much as I like the creaminess of milk chocolate, the bittersweet and semisweet tasted just as delicious.

Just goes to show, all chocolate is so delicious!  

So here they are. A simple easy recipe with only four ingredients.

So versatile too.

Change around the chocolate and there’s even a delicious and beautiful pink sea salt too.

Make a nice variety so everyone can enjoy.

 

Recipe Note: Since the last time I made these chocolate caramels, I’ve discovered a great sugar free chocolate called Lily’s Sweets. The chocolate is sweetened with stevia. Two words, love it! I couldn’t taste the difference. Comes in milk, white, and semisweet chocolate chips. You can find these chocolate chips at Walmart and many grocery stores. Or on Amazon. I just purchased a 3 pack on Amazon for the dark chocolate chips.Also, I discovered Werther’s sugar free caramels. Love those too. I gave the nutritional  count for the original recipe and the sugar free version. 

 

 

 

 

Chocolate Covered Caramels With Sea Salt

Makes 12 candies

Nutritional content for one chocolate covered caramel square using regular milk chocolate chips and Kraft caramels: calories 61, total fat 2.4 g, sat fat 1.4 g, carbs 10 g, fiber 0.1 g, sugars 8.5 g, protein .8 g

Here Are The simple Ingredients That Were Used In These Scrumptious Chocolate Caramels?

  •  12 unwrapped caramels, I used Kraft brand, or sugar free Werther’s original chewy caramels
  •  1/4 cup regular milk chocolate chips, or use the Lily’s for the sugar free version (milk chocolate) Or, here’s the link for a 3 pack of the dark chocolate chips
  •  1 teaspoon coarse sea salt,  more or less to taste
  •  1/4 teaspoon solid coconut oil added to the chocolate chips when melting

Here Are The Easy And Simple Directions…

  1. Have a cookie sheet lined with parchment or wax paper, set aside.
  2. On a microwave safe plate, place the Kraft caramels in microwave for about 15 to 25 seconds, just to soften up a little. Set aside. (Do not completely melt them, you want them to keep their shape, the Werther’s don’t really need to soften up. I found them to be soft enough.)
  3. In a small microwave safe dish, melt chocolate chips for about 25 to 30 seconds. Add the 1/4 teaspoon solid coconut oil with the chips.
  4. Remove from microwave and stir. Place back in microwave for another 20 seconds, stir again. Do this for another 10 to 15 seconds until the chocolate is completely melted and smooth. By mixing the chocolate, it should turn shiny. May take another 20 seconds of mixing to see the chocolate shine.
  5. With a wooden skewer, plastic fork or small spoon toss the caramels in the chocolate. You will have enough to coat them. Place the chocolate coated caramels on the baking sheet that you lined with parchment paper or wax paper. Let the chocolate caramels set. After about 15 minutes sprinkle the salt over each chocolate square. Let them finish setting and enjoy. 
  6. This could take about an hour or so. You can put them in the fridge after the salt in on for only 5 minutes and then let them set on the counter. This is important because if you leave them in the fridge longer, the Kraft caramels will harden and get too hard.
  7. Recipe Note: For best results, keep in an airtight container on the counter and eat within one to two days for best taste and freshness.

Ingredients

  • 1/2 cup milk or semisweet chocolate chips
  • 1 tsp coarse sea salt, or to taste
  • 1/4 tsp solid coconut oil
