Tropical Pineapple Coconut Cupcakes

Skinny Tropical Pineapple Coconut Cupcakes

This is my little guy’s all time favorite dessert. We love making them together and of course he loves licking the bowl from the cake mix. The  frosting he just goes crazy for. It’s a very easy recipe to make and it always comes out so scrumptious! Check out the bottom of the recipe for a picture of my little helper.

Tropical Pineapple Coconut Cupcakes

Makes 18 nice size cupcakes

Ingredients:

Cupcakes:
  • 1 box Betty Crocker Super Moist butter flavor or yellow cake mix (I use Betty Crocker because it has the lowest calories and fat as compared to other cake mixes)
  • 1 20 oz can crushed pineapple in its own juice, minus 2 tablespoons pineapple  (You will use this for the frosting) Make sure you use all the juice from the can. Do not drain.
  • 1 tsp vanilla extract
  • 1/4-1/2 tsp all natural coconut extract (optional but it gives such great flavor.)
  • 1 tbsp water
Frosting:
  • 6 oz low fat cream cheese, softened
  • 2 oz fat free cream cheese, softened
  • 1 cup marshmallow fluff
  • 1 tsp vanilla extract
  • 2-3tbsp powdered sugar
  • 2 tbsp crushed pineapple
  • 2 Tbsp Shredded coconut for topping more if wanted plus sprinkles for decorating
Directions:
  1. Preheat oven to 350 degrees
  2. Have cupcake/muffin pan ready with cupcake liners
  3. In a large bowl mix the cake mix, can of pineapple with juice, and extracts. Mix on medium speed for about 2 minutes until smooth and fluffy.
  4. Let batter sit for at least 10 minutes. I find that by letting the batter rest for a short time the cupcakes end up larger.
  5. In the meantime, in a medium to large bowl make your frosting. Combine the cream cheeses with an electric mixture until nice and fluffy. Add the rest of the ingredients and mix until all combined.
  6. Place in fridge for at least an hour until it firms up a little.
  7. Bake cupcake according to directions on box (usually about 16 minutes) and when you test with a wooden skewer it will come out clean.
  8. Let cool completely and frost. Add a little coconut on each cupcake.
