Chocolate Peanut Butter French Toast Sandwich

This chocolate peanut butter French toast sandwich is out of this world delicious. Easy to make  in under 10 minutes. A treat for breakfast, brunch and snacks.
I’ve been making this recipe for a chocolate peanut butter French Toast sandwich for over 10 years.
The first time I made one of these chocolate peanut butter French toast sandwiches, my son Josh was 6 years old. We had just moved into our new house.
While waiting for him to get off the bus on the first day of in his new school,  I wanted to have something special for him to snack on while he told me about his day.
Josh has always been a fan of my regular French toast and thought this would be something extra special.
To make this into a sandwich made it extra fun and special to eat.
No, utensils, no syrup needed either. It’s so yummy as is.
So, needless to say, Josh loved this and I made one for him for many years.
Now, he’s 17 years old and makes these for himself. Always 2 of course.
He’s a big guy, over 6 feet tall from the little skinny 6 year old. No more calling me mama, it’s now just Ma. LOL!

What’s in a chocolate peanut butter French toast sandwich…

Ingredients:

  • 2 slices whole wheat, white, or any bread of choice. I like using the high fiber lower carbs sandwich bread. Even the white bread has fiber. FYI
  • 2 tablespoons peanut butter, I used Skinny no sugar added smooth peanut butter. For those of you that can’t eat peanut butter, almond, cashew, or any seed butter will work too. For a lower fat and calorie option, use peanut butter powder mixed with water. I would suggest 2 heaping tablespoons with the amount of water that’s on the package.
  • 1 1/2 teaspoons mini chocolate chips
  • 1/4 cup Egg Beaters, or any store brand. You can sub with 2 large eggs, 3 egg whites, or 2 egg whites and 1 whole egg.
  • 3 to 4 tablespoons milk of choice, I used almond milk
  • 1 teaspoon pure vanilla extract, I love this brand and use it for all my dessert and sweet recipes
  • 1 pinch salt added to the egg mixture, this is optional
  • cooking spray
  • powdered sugar for garnish, this is optional

How is this chocolate peanut butter French toast sandwich made…

  1.  Spread peanut butter on the bread. Sprinkle the mini chips over the peanut butter. Close the sandwich.
  2. In a wide bowl, mix up the Egg Beaters or eggs along with the milk of your choice, vanilla extract and salt if using. Now, dip your sandwich in the egg mixture. I try to use up all of the egg mixture.
  3. Have a non-stick pan ready misted with cooking spray (either regular or butter flavored)
  4. Keep the temperature at medium on the stove top. Place your sandwich on the pan and press very lightly with a thin spatula. Spray the top of the sandwich with the cooking spray and be ready to turn it over. Turn over when you check to see the bottom is brown. Cook for a few more minutes or until brown on the other side. You can press down again but do so very gently. Remove, cut in half and ENJOY this gooey treat!

Ingredients

  • 2 tbsp peanut butter, (I used no sugar) or regular peanut butter, for those of you that can’t eat peanuts, use almond or cashew butter. Comes out delish too. Also, for those who want to cut down on even more calories and fat, try using 2 tablespoons powdered peanut butter with about 3 tablespoons water. Mix to a peanut butter consistency.
