Surprise Dark Chocolate Peanut Butter Balls

These peanut butter balls are totally decadent and so easy to make. Watch them disappear as soon as you serve them. Enjoy a few without the guilt!

Made with a special ingredient that you would never think would complement a peanut butter mixture.

But it really does and by using this surprise ingredient, you’ll save a lot of extra calories and fat.

These peanut butter balls are rich tasting and decadent with less fat, calories, and sugar than other similar type of peanut butter balls you find in chocolate  and candy stores.

But, you would never know it after biting into one of these delicious gems.

That being said, go ahead and check out this recipe, you will be so glad you did and so will anyone you serve these to.

Surprise Dark Chocolate Peanut Butter Balls

Yields: 18 balls

Nutrition: calories 98.4, fat 6.6 g, sat fat 1.8 g, carbs 12.1 g, sugars 5 g, protein 3 g, fiber 3 g

Ingredients:

  • 1 cup raisins soaked in water for about 15 minutes. Drain off and save some of the liquid. (Surprise ingredient)
  • 2/3 cup natural creamy peanut butter, unsalted and unsweetened
  • 1 1/2 tsp vanilla extract
  • 1-4 tbsp oat flour or if you don’t have oat flour, use quick or instant oats, whirl in blender until flour texture
  • 1-2 tbs raisin liquid if needed
  • 1/2 tsp kosher or sea salt
  • 1 cup dark chocolate chips, I used Lily’s Chocolate Chips , found online or in most markets with other chocolate chips

 

 

 

 

 

 

Directions:

  1. Combine the raisins, peanut butter, salt and vanilla in a food processor or high speed blender. Process until well combined.. Add the oat flour or oats, start with 1 tablespoon and process until combined. Should be like a cookie dough consistency that you can roll into balls.
  2. Scoop dough using a tablespoon, roll into balls, and place on a parchment-lined cookie sheet. Refrigerate for at least 30 minutes.
  3. Place chocolate chips into a small to medium microwave safe bowl. Heat for 20 second increments. Stir after each heating until smooth and shiny.
  4. Dip the balls into the chocolate using a wooded skewer or fork, then place back on the parchment. Refrigerate until the chocolate is set.
  5. Store in an airtight container in the refrigerator. Note:  If you have any leftover chocolate, you can put into a Ziploc bag and snip off the corner and decorate the tops.

    3. In a small bowl, melt chocolate in microwave for 20 second increments until smooth and shiny. Stir between each heating. 

    4. Using a wooden skewer or fork, dip the peanut butter balls into the chocolate, and place back on the parchment. Refrigerate until the chocolate is set.

    5. Store in an airtight container in the refrigerator. Note: If you have any leftover chocolate, you can put into a Ziploc bag and snip off the corner and decorate the tops.
